Fall Baking

Hello Thrifties!

Well with fall officially here it is hard not to notice all the pumpkin stuff. It's pumpkin scented soaps and pumpkin shaped Little Debbie cakes. It's pumpkin bread mix and pumpkin butter spreads. Oh my word. I'm about pumpkined out. But on a better note. I wanted to share one of my favorite fall recipes... of course ... pumpkin chocolate chip muffins. Well, you had to know it would be something pumpkin, didn't you? LOL...

Now understand when I first got this recipe Thrifty Honey was not a very pumpkin kind of guy. So I did the normal thing. I made them and after he ate a few of them and commented about how good they were. Then I told him they were pumpkin. He was okay with that but he didn't make any requests for them. LOL. He's really not much on muffins but more of a man who like biscuits. I have not perfected that in my kitchen adventures. But I'm working on it. If round things that are as hard as rocks and the ones that are flatter than a flitter count I'm in business. So much for getting sidetracked on to the fabulous recipe.


Pumpkin Chocolate Chip Muffins

1 and 2/3 cup of all purpose flour
1 Cup of sugar
1 Teaspoon of baking soda
1 Teaspoon of baking powder
1 Tablespoon of pumpkin spice

Mix all of the above in one bowl.

2  Large eggs
1 Cup of plan pumpkin (Libby's)
1 Cup of milk chocolate chips
1/2  Cup of melted butter ( Be sure and let it cool or your chips will melt)

Mix this part into another bowl.

Then mix both bowls together and spoon into muffin pan.
Bake on 350 degrees for 30 minutes.

This makes one dozen.

These would be great to grab one on your way out the door to work or to take a basket of them to a brunch. Better yet I could see these showing up with a hot cup of coffee for some cool porch time. After all it is fall and pumpkin is the in thing.
